How they differ
A 27-inch 16:9 panel is about 23.5 inches (60 cm) wide. Two side by side span about 47 inches (119 cm) flat, or 45.4 inches (115 cm) angled inward at 15 degrees. A 34-inch 21:9 ultrawide is about 31.5 inches (80 cm) wide as one continuous panel and ships with a gentle 1500R curve, the standard radius for 34-inch ultrawides, which pulls the edges slightly toward you. On a 60-inch (152 cm) desk both fit with room to spare, but the ultrawide leaves over twice the leftover desk space for speakers, a lamp, or a laptop. The counter-argument is flexibility: dual monitors let you tilt each panel independently, run different color profiles, or rotate one to portrait later. The ultrawide is one fixed curved shape.
Verdict
If your work is one wide canvas - a timeline editor, a spreadsheet that stretches, a racing sim - the 34-inch ultrawide is the better shape. If you alt-tab between two focused windows, want a left-right split with independent panels, or want the cheaper entry point, dual 27s win. On a 60-inch desk space is not the deciding factor; workflow is.

Pick dual 27-inch monitors when you run two focused apps side by side and want a hard split between them: code on the left, browser on the right, chat on a vertical panel. Dual panels also cost less, let you rotate one to portrait later, and let you replace one at a time as they age.
Choose Single 34-inch 21:9 ultrawide
Pick a 34-inch ultrawide when your work spans one wide surface: video timelines, audio DAW arrangements, spreadsheet models, racing or flight sims. The missing center bezel matters most for content that crosses the midpoint, and you get a cleaner desk with twice the leftover space.
