How they differ

The triangle wave's odd-only harmonic structure and fast decay make it sound closer to a sine - useful when you want some harmonic content but not the brightness. Because the sawtooth includes the second harmonic (the octave), it carries a noticeable pitch-doubling component, which is why some chord-like patches use stacked sawtooths to fill out the spectrum.
